Breakfast
Coconut Protein Pancakes
- 1 cup shredded coconut (blitz in the blender for a couple seconds)
- 3 tbsp almond meal
- 3 tbsp coconut milk
- 1 tbsp raw hemp protein powder (e.g. Ruth's Goodness Certified Organic Hemp Protein Powder)
- 4 eggs
- Mix all ingredients into large mixing bowl
- Using a 1/4 cup measuring cup, scoop batter and pour gently into medium hot pan*
- Using back of spoon, pat gently to thin batter out creating a nice round pancake
- Flip when ready, cook until golden and cooked throughout
- Serve with toppings of choice (berries, chopped banana or stevia )
Simple Paleo English Muffin
- 3 tbsp ground almonds
- 1 egg
- 1 1/2 tbsp coconut milk
- 1/4 tsp Stevia
- pinch of sea salt
- Grease a glass Pyrex dish (the bottom of the dish should be around the size of an english muffin)
- Place all ingredients into dish
- Heat for 2.5 minutes or until cooked throughout*
- Let cool for a couple seconds. Pop English Muffin out carefully.
- Top with your favorite spread and Enjoy!
Sweet Berries and Almond Porridge
- 1/2 cup frozen mixed berries (Optional de-thaw ahead of time)
- 1/4 cup boiling water
- 1/4 tsp raw cacao powder
- 1/2 tsp stevia
- 1 tsp coconut oil
- 5 tbsp almond meal
- Cashews, & additional cacao powder, & Stevia (Optional)
- Mix all ingredients into a large serving bowl
- Warm on stove top for couple minutes until desired temperature (may only need to be done if your fruit was completely frozen- depending on how hot you like it)
- Top with sprinkled cacao, whole cashews & additional stevia to taste (Optional)
Chia Seed Porridge
- 3 tbsp almond meal
- 1 tbsp coconut milk
- 1/2 cup chia seed gel*
- 1/3 stevia
- 1/3 tsp nut butter
- Pinch of sea salt
- Toppings: Cacao, pecans, additional stevia (optional)
- *To make the chia seed gel, simply place 2 tbsp of chia seed into one cup of water. Mix well and let sit for a few minutes.
- Mix all ingredients together in a small circle Pyrex dish
- Heat for 3 minutes
- Transfer to a serving bowl, top with additional coconut milk, dust with cacao, and a handful of pecans
- Add additional stevia to taste (optional)
